Equipment

Ingredients

  • 𝗙𝗼𝗿 𝗗𝗼𝘀𝗮 𝗕𝗮𝘁𝘁𝗲𝗿:

  • 1 cup rice

  • 1/2 cup urad dal (split black gram)

  • 1/4 teaspoon fenugreek seeds

  • Water (for soaking and grinding)

  • Salt to taste

  • 𝗙𝗼𝗿 𝗣𝗼𝘁𝗮𝘁𝗼 𝗙𝗶𝗹𝗹𝗶𝗻𝗴:

  • 4 medium-sized potatoes, boiled and mashed

  • 1 onion, finely chopped

  • 2 green chilies, finely chopped

  • 1/2 teaspoon mustard seeds

  • 1/2 teaspoon cumin seeds

  • A pinch of asafoetida (hing)

  • 1/2 teaspoon turmeric powder

  • 1 tablespoon oil

  • Salt to taste

  • Fresh coriander leaves, chopped (for garnish)

  • 𝗙𝗼𝗿 𝗖𝗼𝗰𝗼𝗻𝘂𝘁 𝗖𝗵𝘂𝘁𝗻𝗲𝘆:

  • 1 cup grated coconut

  • 2 green chilies

  • 1/2 cup roasted chana dal (split and roasted chickpeas)

  • A small piece of ginger

  • Salt to taste

  • Water (as needed)

Instructions

Prepare Dosa Batter:

Wash rice, urad dal, and fenugreek seeds. Soak them in water for 4-6 hours. Grind to a smooth batter, adding water as needed. Ferment the batter overnight. Add salt before making dosas.

Prepare Potato Filling:

In a pan, heat oil. Add mustard seeds and cumin seeds. Let them splutter. Add asafoetida, chopped onions, and green chilies. Sauté until onions are golden brown. Add turmeric powder, boiled and mashed potatoes, and salt. Mix well and cook for a few minutes. Garnish with chopped coriander leaves.

Make Coconut Chutney:

Blend grated coconut, green chilies, roasted chana dal, ginger, and salt with water to make a smooth chutney.

Cook Dosas:

Heat a dosa pan. Pour a ladle of dosa batter and spread it in a circular motion. Drizzle oil around the edges. Cook until the dosa is crisp and golden.

Assemble Masala Dosa:

Place a spoonful of the potato filling in the center of the dosa. Fold it into a half-moon shape. Serve hot with coconut chutney.
