Equipment

Ingredients

  • 200g paneer (cottage cheese), cubed

  • 4 cups fresh spinach leaves, washed and chopped

  • 1 large onion, finely chopped

  • 2 tomatoes, pureed

  • 1 tablespoon ginger-garlic paste

  • 1/2 cup plain yogurt

  • 1/2 cup milk or cream

  • 2 tablespoons ghee or oil

  • 1 teaspoon cumin seeds

  • 1 teaspoon coriander powder

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon red chili powder (adjust to taste)

  • 1 teaspoon garam masala

  • Salt to taste

  • Fresh coriander leaves for garnish

Instructions

Blanch Spinach:

Boil water in a pot and blanch the chopped spinach for 2-3 minutes. Drain and immediately transfer the spinach to ice-cold water. Blend the blanched spinach into a smooth puree.

Sauté Onions and Cumin Seeds:

In a pan, heat ghee or oil. Add cumin seeds and let them splutter. Add finely chopped onions and sauté until golden brown.

Add Ginger-Garlic Paste and Spice Powders:

Add ginger-garlic paste and cook until the raw smell disappears. Stir in coriander powder, turmeric powder, red chili powder, and salt. Cook for 2-3 minutes.

Introduce Tomato Puree:

Add tomato puree and cook until the mixture thickens and the oil separates from the masala.

Combine Spinach Puree:

Add the spinach puree to the pan and mix well. Cook for 5-7 minutes until the flavors meld.

Add Paneer and Dairy:

Add cubed paneer to the spinach mixture. Stir in yogurt and milk or cream. Allow it to simmer for another 10 minutes.

Season with Garam Masala:

Season the dish with garam masala, adjusting the spice levels according to your preference.

Garnish and Serve:

Garnish with fresh coriander leaves. Serve hot with naan or rice.
