Ingredients

  • 1/2 cup Basmati rice, washed and soaked for 30 minutes

  • 1 liter full-fat milk

  • 1/2 cup sugar (adjust to taste)

  • 1/4 cup chopped nuts (almonds, cashews, pistachios)

  • 1/4 teaspoon cardamom powder

  • Saffron strands soaked in warm milk (optional)

  • Rose water (optional)

  • Chopped dried fruits for garnish (dates, raisins)

Instructions

Cook Rice:

In a heavy-bottomed pan, bring the milk to a boil. Add soaked and drained Basmati rice. Simmer on low heat, stirring frequently until the rice is cooked and the milk thickens.

Sweeten the Kheer:

Add sugar and continue to cook until the sugar dissolves and the kheer reaches the desired consistency.

Add Nuts and Flavorings:

Stir in chopped nuts, cardamom powder, and saffron-soaked milk. Optional: Add a few drops of rose water for flavor.

Garnish and Chill:

Garnish with chopped dried fruits. Let the kheer cool to room temperature, then refrigerate for a few hours before serving.

Serve chilled as a delightful dessert.
