Ingredients

  • 2 cups thick Poha (flattened rice)

  • 2 tablespoons vegetable oil

  • 1 teaspoon mustard seeds

  • 1 teaspoon cumin seeds

  • 1/2 cup finely chopped onions

  • 1/2 cup chopped potatoes, parboiled

  • 1/4 cup green peas

  • 2 green chilies, finely chopped

  • 1/2 cup roasted peanuts

  • 1/2 teaspoon turmeric powder

  • Salt to taste

  • Fresh coriander leaves for garnish

  • Lemon wedges for serving

Prepare Poha:

Rinse the thick Poha under cold water in a sieve and set aside for 10 minutes to soften.

Sauté Mustard Seeds and Cumin Seeds:

Heat vegetable oil in a pan. Add mustard seeds and cumin seeds. Allow them to splutter.

Add chopped onions, parboiled potatoes, green peas, and chopped green chilies. Sauté until the onions are translucent and the vegetables are tender.
