Ingredients

  • 1 cup chickpea flour (besan)

  • 1/4 cup rice flour

  • 1 large potato, peeled and thinly sliced

  • 1 onion, thinly sliced

  • 1 cup mixed vegetables (cauliflower florets, spinach leaves, and/or bell pepper), finely chopped

  • 1 teaspoon ginger-garlic paste

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon red chili powder (adjust to taste)

  • 1 teaspoon cumin seeds

  • A pinch of asafoetida (hing)

  • Fresh coriander leaves, chopped

  • Salt to taste

  • Water (as needed)

  • Oil for deep frying

Prepare the Batter:

In a mixing bowl, combine chickpea flour, rice flour, ginger-garlic paste, turmeric powder, red chili powder, cumin seeds, asafoetida, and salt. Gradually add water to form a smooth, lump-free batter. The consistency should be thick enough to coat the vegetables.

Add Vegetables:

Add thinly sliced potatoes, sliced onions, and chopped mixed vegetables to the batter. Mix well to coat the vegetables evenly.

Heat Oil:

Heat oil in a deep frying pan over medium heat. Ensure the oil is hot enough for frying.

Fry Pakoras:

Drop spoonfuls of the vegetable batter into the hot oil, frying until they turn golden brown and crisp. Use a slotted spoon to remove the pakoras and place them on a kitchen towel to absorb excess oil.

Serve:

Garnish with freshly chopped coriander leaves. Serve hot with mint chutney or tamarind sauce.
