Ingredients

  • 200g paneer (cottage cheese), cubed

  • 2 large tomatoes, chopped

  • 1 large onion, finely chopped

  • 1/4 cup cashews, soaked in warm water

  • 1 tablespoon ginger-garlic paste

  • 1/2 cup milk or heavy cream

  • 2 tablespoons butter

  • 1 tablespoon oil

  • 1 teaspoon cumin seeds

  • 1 teaspoon coriander powder

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon red chili powder (adjust to taste)

  • 1 teaspoon garam masala

  • Salt to taste

  • Fresh coriander leaves for garnish

Instructions

Prepare Tomato Cashew Paste:

Blend chopped tomatoes and soaked cashews into a smooth paste.

Cook Onion Base:

Heat oil and 1 tablespoon butter in a pan. Add cumin seeds. Sauté finely chopped onions until golden brown. Add ginger-garlic paste and cook until the raw smell disappears.

Add Tomato Cashew Paste:

Pour the tomato-cashew paste into the pan. Cook on medium heat until the mixture thickens and the oil starts to separate.

Spice it Up:

Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes.

Add Paneer and Milk/Cream:

Add cubed paneer to the pan. Stir gently to coat the paneer with the masala. Pour in milk or heavy cream, stirring continuously. Adjust the consistency as needed.

Finish with Garam Masala and Butter:

Sprinkle garam masala and add the remaining 1 tablespoon of butter. Mix well. Simmer for 5-7 minutes until the paneer absorbs the flavors.

Garnish and Serve:

Garnish with fresh coriander leaves. Serve hot with naan or rice.
