Ingredients

  • 1 kg carrots, grated

  • 1 cup full-fat milk

  • 1 cup khoya (reduced milk solids)

  • 1 cup sugar (adjust to taste)

  • 1/2 cup ghee (clarified butter)

  • 1/4 cup mixed nuts (almonds, cashews, pistachios), chopped

  • 1/2 teaspoon cardamom powder

  • A pinch of saffron strands (optional)

  • Freshly grated coconut for garnish (optional)

Instructions

Grate Carrots:

Wash and peel the carrots. Grate them using a fine grater.

Cook Carrots in Ghee

In a heavy-bottomed pan, heat ghee. Add grated carrots and sauté on medium heat until they become soft and release their aroma.

Add Milk and Khoya:

Pour in the full-fat milk and add khoya. Continue cooking on low heat, stirring occasionally, until the mixture thickens.

Sweeten with Sugar:

Add sugar to the mixture and stir well. Cook until the sugar is completely dissolved and the halwa reaches a desired consistency.

Infuse with Flavors:

Sprinkle cardamom powder and add a pinch of saffron strands (if using). Stir to incorporate the flavors.

Garnish with Nuts:

Add chopped nuts to the halwa and reserve some for garnish. Mix well.

Serve Warm:

Garnish with freshly grated coconut and the reserved nuts. Serve warm, and enjoy the indulgent taste of Gajar Ka Halwa.
